The perfect dessert for those who love oranges!


Ingredients



CRUST

1 cup (2 sticks or 226g) butter, cold

1 cup (126g) confectioners sugar

2 cups (252g) all-purpose flour



FILLING

4 large eggs, room temperature

1 1/2 cups (300g) granulated sugar

1/4 cup (32g) all-purpose flour

2/3 cup (160ml) freshly squeezed orange juice

2 teaspoons orange zest (up to 1 tablespoon, but zest can be strong so start with less)

confectioners sugar, for dusting


Directions



CRUST




  1. Preheat oven to 350°F.






  2. In a medium bowl, blend together cubed butter, flour and sugar with a pastry cutter, a food processor, or your hands. Press into the bottom of a 9x13 inch pan lined with parchment paper.






  3. Bake for 15 minutes in the preheated oven, or until the edges are just starting to brown.







FILLING




  1. In a large bowl, crack eggs and whisk them.






  2. To the eggs, add sugar, flour and orange juice. Whisk well, until no clumps remain. Pour over the baked crust after it is done baking.






  3. Once the filling has been added, bake for an additional 20 minutes. (Do not cover.)






  4. Remove from oven and let bars cool to room temperature. Place in the refrigerator for at 2 hours then dust with confectioners sugar before serving.






  5. Cut into squares and serve.

Other than adding orange zest and sliced almonds as a garnish, I made the recipe as directed. The flavor was wonderful, life and refreshing without being overbearing.
