Ingredients
- 5 cups rhubarb (coarsely chopped)
- ¼ tsp ginger (freshly grated)
- 1 and ¼ cup sugar
- 1 and ½ cup water
- Zero-alcohol gin (can be substituted for regular gin)
- Ginger ale (We recommend Bruce Cost Ginger Ale)
- Ice
- Mint leaves
- Lime wedges
Directions
- In a small pot, bring rhubarb, ginger, sugar, and water to a boil
- Reduce heat and simmer contents until fruit has softened and started to break down (about 20 mins)
- Using a fine mesh strainer, strain rhubarb mixture into a bowl
- Pour into a bottle or jar, refrigerate until cold
Add 2 tbsp. Of rhubarb mixture to 1 shot of zero-alcohol gin, top it off with ice, ginger ale, a mint sprig, and lime wedge
