Rhubarb Ginger Cocktail


  • 5 cups rhubarb (coarsely chopped)

  • ¼ tsp ginger (freshly grated)

  • 1 and ¼ cup sugar

  • 1 and ½ cup water

  • Zero-alcohol gin (can be substituted for regular gin)

  • Ginger ale (We recommend Bruce Cost Ginger Ale)

  • Ice

  • Mint leaves

  • Lime wedges 


  1. In a small pot, bring rhubarb, ginger, sugar, and water to a boil

  2. Reduce heat and simmer contents until fruit has softened and started to break down (about 20 mins)

  3. Using a fine mesh strainer, strain rhubarb mixture into a bowl

  4. Pour into a bottle or jar, refrigerate until cold

Add 2 tbsp. Of rhubarb mixture to 1 shot of zero-alcohol gin, top it off with ice, ginger ale, a mint sprig, and lime wedge
