This recipe is such a playful take on breakfast! The assembly process is a great way to get your kids involved in the kitchen, and they can build their very own yogurt parfait pancakes. We recommend using the Maple Grass Fed Creamline Yogurt for that classic pancake and maple syrup flavor.
Ingredients
For the Pancakes:
1 1/4 cups of all-purpose flour
1/2 cup of whole wheat flour
1 tablespoon of sugar
2 teaspoons of baking powder
1/2 teaspoon of baking soda
1/4 teaspoon of salt
1 3/4 cups of buttermilk
1 egg
1 tablespoon of unsalted butter, melted
1/8 teaspoon of vanilla or almond extract
For the Toppings:
1/2 cups of preferred yogurt
3/4 cup of granola
3 cups of mixed berries (strawberries, blueberries, raspberries, blackberries)
Directions
1. In a large bowl, whisk together the flours, sugar, baking powder, baking soda, and salt. In a separate bowl, whisk together the buttermilk, egg, butter, and vanilla/almond extract. Pour the wet ingredients into the dry and mix until smooth.
2. Coat a griddle or large skillet with cooking spray and heat to medium. Pour 3 tablespoons of batter onto the griddle and cook until bubbles on pancake start to break (about 2 minutes). Flip with a spatula and cook the other side until golden brown. Repeat until the batter is gone.
3. To assemble each serving, place one pancake on a plate and spread yogurt on top. Top with berries and sprinkle on some granola. Top with a second pancakes and spread on yogurt, topping with more berries and granola. Repeat to make the remaining 5 servings.
