Enjoy a Prune Plum Tart after dinner!
3/4 pound of Prune Plums
2 tablespoons of Tapioca
2 tablespoons of Creme de Cassis Liqueur
1 3/4 cup of Sugar
1/4 pound of Unsalted Butter (room temperature)
1 1/4 cup of All-purpose Flour
1/2 teaspoon of Ground Cinnamon
1/2 teaspoon of salt
1/4 teaspoon of Baking Powder
Preheat oven to 350 degrees.
Place the plums (sliced), tapioca, creme de cassis, and 3/4 cup of sugar in a mixing bowl and stir. Allow to sit for 15 minutes.
Cream the butter and 1 cup of sugar in a electric mixer on medium speed.
Combine flour, cinnamon, salt, and baking power in another bowl.
Add the dry ingredients to the butter mixture with the mixer on low. Add 1 tablespoon of cold water and stir for about 30 seconds.
Set aside 3/4 cup of the crumb mixture and pour the remaining in the pan. Pat the dough in the pan and 1 inch up the side of the pan.
Arrange plums in circles on the crust and sprinkle the remaining crumb mixture on the top.
Bake for an hour until the crust is golden. Cool for 15 minutes.
