
This super quick seafood dish is ready to serve in just 10 minutes! Using ghee clarified butter, this dish is slightly sweet, nutty, and definitely delicious. The garlic lemon sauce adds a boost of acid to the seared scallops.
Ingredients
1 pound of sea scallops
1/4 cup of ghee clarified butter
5 cloves of garlic, grated
1 large lemon, zested
1/4 cup of Italian parsley, roughly chopped
1/2 teaspoon of sea salt
1/4 teaspoon of freshly ground peppercorns
1/4 teaspoon of red pepper flakes
Pinch of sweet paprika
Directions
1. Heat up a large cast iron skillet on medium heat. In a medium bowl, toss the scallops with a drizzle of ghee to completely coat them. Sprinkle them with sea salt, cracked pepper, red pepper flakes, and sweet paprika. Toss to coat gently.
2. Add a drizzle of ghee to coat the bottom of the pan. Add the scallops, making sure not to overcrowd the pan, and sear for about 2 minutes on each side until nicely golden.
3. Add more ghee to the skillet with the scallops, followed by the garlic. Remove from the heat and using a spatula, push the garlic around to infuse the sauce for about 30 seconds.
4. Squeeze half of the lemon over the scallops and stir to combine with the ghee sauce. Sprinkle with the minced parsley and lemon zest.
