A quick and healthy thirty minute recipe for seafood lovers.
Grilled Calamari
1 lb calamari
1 tablespoon olive oil
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon oregano
1 teaspoon lemon juice
Garlic Cauliflower Rice
1 head of cauliflower-chopped and minced
2 cloves garlic-minced
1 tablespoon olive oil
Sriracha sauce to top
Grilled Calamari
1. Start grill and warm to a medium heat. Clean the calamari tubes and bodies and pat dry with a paper towel.
2. Create a marinade with olive oil, salt, pepper, oregano, and lemon. Place calamari into marinade and let it season.
3. Place calamari tubes and tentacles on grill for 5-10 minutes. Flip occasionally to prevent them from getting burned.
4. Once grilled, remove the calamari tubes and slice them into bite size pieces to lay upon the bed of cauliflower rice.
Garlic Cauliflower Rice
1. Chop and mince the head of cauliflower.
2. Pre-heat a large fry pan to a medium setting and add the olive oil and minced garlic.
3. Saute the cauliflower approximately 10 minutes until finished. Once complete, plate the cauliflower and then add the calamari on top. Drizzle sriracha on top and enjoy!
