2 tablespoons of olive oil
1 medium onion, sliced
2 garlic cloves, sliced
1 cup of hummus
1 pound of spaghetti or linguini pasta
Lemon juice and zest
1/4 cup of chopped fresh basil or parsley
Pinch of crushed red pepper flakes
1. Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until al dente according to the package directions. Reserve 1 cup of pasta cooking water, then drain the pasta and return it to the pot to stay warm.
2. In a large skillet, heat the olive oil over medium heat. Add in the onion and cook for 5 - 7 minutes or until softened and fragrant. Add in the garlic and cook for 30 seconds or until fragrant. Add in the spinach/kale and cook for about 1 minute or until it slightly wilts.
3. Add in the hummus, about 1/2 cup of the pasta cooking water, lemon juice, lemon zest, and stir until a creamy sauce forms. Add more pasta water to thin the sauce as desired.
4. Transfer the cooked pasta to the skillet, turn off the heat, and toss everything together. Top with chopped fresh herbs and crushed red pepper. Serve with parmesan cheese if desired.
