This deliciously crunchy salad featuring kale, broccoli, and apples is tossed in a perfectly tangy lemon poppy seed dressing. It is a great way to change up your salad routine and use some seasonal produce.
For the Salad:
4 cups of kale, torn or chopped
8 ounces of broccoli florets
1 medium apple, cored and chopped
1/3 cup of thinly sliced red onion
1/2 cup of dried cherries or cranberries
For the Dressing:
6 tablespoons of olive oil
1 small shallot, finely grated or chopped
3 tablespoons of fresh lemon juice
1 1/2 tablespoons of maple syrup
1 teaspoon of dijon mustard
1 teaspoon of poppy seeds
Salt and pepper, to taste
1. Place the olive oil, shallot, lemon juice, dijon mustard, maple syrup, poppy seeds, salt, and pepper in a small jar. Secure the lid and shake vigorously until emulsified.
2. Place the kale in a large bowl. To make the leaves more tender, massage the kale with 1 tablespoon of olive oil for about 30 seconds, or until the kale reaches the desired level of tenderness.
3. Add the broccoli, apple, red onion, and dried cherries or cranberries to the bowl of kale.
4. Pour the desired amount of dressing over the salad and toss to coat.
