Fattoush is a Mediterranean fried bread salad that features fried pita bread, lettuce, cucumbers, tomatoes, and other fresh veggies! This meatless dish is perfect for lunch or as a crunchy side dish for dinner.
Ingredients
For the Salad:
1 large head of romaine lettuce, chopped
1 large vine-ripe tomato, diced
2-3 Persian cucumbers or 1 large cucumber, quartered
1/2 of a large green pepper, chopped
5 radishes, diced
2 green onions, chopped
1/4 cup of fresh chopped parsley
For the Dressing:
3 tablespoons of olive oil
2 tablespoons of lemon juice
2 garlic cloves, pressed or grated
1 teaspoon of sumac
1 teaspoon of pomegranate molasses, optional
1/2 teaspoon of dried mint
1/2 teaspoon of Kosher salt
Fresh cracked black pepper, to taste
For the Fried Pita Bread:
1 large double ply pita bread, cut into triangles
3 tablespoons of olive oil
Kosher salt, to taste
Freshly cracked black pepper, to taste
Directions
1. Make the Dressing: Whisk together the lemon juice, garlic, sumac, pomegranate molasses (if using), dried mint, salt, and pepper. Slowly steam in the olive oil, whisking continuously until emulsified. Season to taste with salt and pepper. Set aside.
2. Fry the Pita Bread: In a large skillet, heat the olive oil on medium heat. Add the pita bread and season with salt and pepper. Cook, stirring frequently, until the pieces of bread are crispy and golden in color, about 5-7 minutes. Set aside.
3. Place the lettuce, tomatoes, cucumbers, green peppers, radishes, green onions, and parsley in a large serving bowl. Pour the dressing on top and toss to combine.
4. Add the fried pita bread to the salad immediately before serving and gently toss again.
