This delicious kale salad can be made using GoodHealthy's Superfood Blend containing kale and beets. Featuring sweet pomegranate arils and orange slices, this salad has the perfect amount of bite. To top it off, the orange ginger dressing adds a subtly spicy kick that rounds out the dish.
Ingredients
For the Salad:
8 cups of kale: packed, stems removed, and chopped
1 tablespoon of extra virgin olive oil
1/4 teaspoon of salt
1 large pomegranate, arils only
1 orange (or blood orange), sliced
1/4 cup of almonds: slivered, sliced, or coarsely chopped
For the Orange Ginger Dressing:
1/4 cup of orange juice
1 tablespoon of extra virgin olive oil
1 teaspoon of fresh ginger, grated
1/4 teaspoon of salt
Ground black pepper, to taste
Directions
1. In a large salad bowl, add the kale, olive oil, and salt. Massage the kale with your hands for 2-3 minutes until the amount of kale shrinks a bit.
2. Prepare the pomegranate and orange slices. Add them to the bowl and set it aside.
3. Toast the nuts in a skillet on medium heat until fragrant, stirring often. Transfer to the bowl with salad.
4. In a small bowl, add the orange juice, olive oil, ginger, salt, and pepper. Whisk with a fork.
5. Pour the dressing over the salad and toss gently. Serve and enjoy!
