Peperonata is an Italian summer side dish using Peppers, Onion, Olive Oil, and Tomatoes.

3/4 cup of Olive Oil
6 cloves of sliced Garlic
2 sliced Onions
6 Bell peppers
1 cup of tomatoes
Salt
Oregano
1 tablespoon of white wine or red wine Vinegar
Heat 1/2 cup of olive oil until shimmering on medium heat. Then add garlic for about 3 to 4 minutes. Put in onions stir on medium-high for 2 minutes. Put in peppers and cook for about 20 minutes.
Add tomato, basil, and oregano and stir. Lower heat and maintain a gentle simmer. Cook until peppers are soft for about 1 hour. Add in the salt, vinegar and the remaining olive oil.
