This super simple Carrot Ginger soup has some sweet spice! The combination of the sweet, orange carrots and the fresh ginger root creates a perfect, warming balance. This soup would be a perfect lunch or appetizer for dinner tonight!
1 tablespoon of olive oil
1 small onion, chopped
1 garlic clove, minced
3 teaspoons of minced fresh ginger root
4 large carrots, peeled and chopped
3 cups of vegetable broth
2 teaspoons of grated lemon zest
1/2 teaspoon of salt
1/4 teaspoon of ground black pepper
2 tablespoons of fresh lemon juice
1. In a Dutch oven or a stockpot, heat oil over medium heat. Add the onion; cook and stir until tender, 4-5 minutes. Add in the garlic and ginger; cook 1 minute longer.
2. Stir in the carrots, broth, lemon zest, salt, and pepper; bring to a boil. Reduce the heat; simmer, covered, until carrots are tender, 10-12 minutes.
3. Pulse the soup in a blender or with an immersion blender to the desired consistency; stir in the lemon juice.
