Creamy Asparagus Soup

This super simple soup is ready to serve in under 30 minutes! A perfect part of a weeknight meal, we suggest serving this up with some dinner rolls or your favorite sandwiches.


1 1/2 pounds of asparagus, trimmed and washed

1 tablespoon of butter

1 small onion, diced

1 clove of garlic, minced

2 1/4 cups of chicken or vegetable broth 

Salt and black pepper, to taste

1/2 teaspoon of fresh lemon juice 

1/2 cup of heavy cream

Parmesan cheese, for serving


1. Cut the asparagus into 1/2 inch pieces. Cook the onion and garlic in the butter over medium heat until tender. Add the asparagus and cook an additional 5 minutes.

2. Stir in the broth, salt, and pepper. Cover and let simmer for 10-15 minutes or until the asparagus is softened. 

3. Using a hand blender, puree the soup until smooth. Stir in the cream and lemon juice. 

4. Taste and season with salt and pepper if needed.
