Description
Due to its texture and bulk, eggplant is sometimes used as a meat substitute in vegan and vegetarian cuisines. Its numerous seeds are small, soft and do not have to be removed. Its thin skin is also edible and so it does not have to be peeled. However, the green part at the top -- the calyx -- does have to be removed when preparing an eggplant for cooking. Eggplant is loaded with vitamin A and C and is beneficial for helping your cells process sugar.
Eggplant can be sensitive to cool temperatures, so aim to store it at room temperature. If refrigeration is necessary, wrap it in plastic and plan to use within a few days.
