Get ready for the holiday season with these Granola-Stuffed Baked Apples! They’re the perfect healthy treat to satisfy any sweet tooth! Make sure you eat them hot and top with some vanilla ice cream!
Ingredients
- 2 apples halved (honey crisp work the best!)
- 1 cup granola any kind
- ¼ cup light brown sugar packed
- 2 tablespoons unsalted butter melted
- 1 teaspoon vanilla bean paste (or vanilla extract)
- ¾ teaspoon ground cinnamon
Directions
Preheat oven to 350°F. Lightly grease a 9x13-inch baking dish with non-stick cooking spray.
Carefully scoop out apple filling, leaving about ¼ inch apple shell left in the skin. Set apples in a prepared dish.
In a medium bowl, stir together granola, brown sugar, melted butter, vanilla extract, and cinnamon.
Spoon mixture into apple halves. Cover dish with aluminum foil and bake for 20 minutes. Remove foil and bake for another 15-20 minutes, or until apples are tender.
Remove from oven and let cool slightly. Serve immediately.
