Greek Yogurt and Honey Blackberry Pops

With summer just around the corner, you'll need something to cool you off; these greek yogurt and honey blackberry ice pops are a perfectly delicious way to do just that!
Ingredients
-2/3 cup boiling water
-2 tablespoons fresh mint leaves
-3-1/2 cup vanilla greek yogurt
-1/4 cup honey
-1 teaspoon fresh lemon juice
Directions
1. Crush 1-2 tablespoons of mint leaves in 2/3 cup of boiling water with the back of a spoon. Steep for 2 to 3 minutes, remove the leaves from the water. Stir in the lemon juice and honey.
2. Puree 3 to 3-1/2 cups of fresh blackberries with the mint water. With a spatula, pour the blackberry puree into a fine mesh strainer, pressing on the solids to extract as much puree as possible. Discard the seeds.
3. Combine the strained blackberry puree with the yogurt, pour into popsicle molds, insert a stick, and freeze for 8 hours or overnight.
