Bubbly and refreshing, this delicious mocktail is packed with flavor and freshness. Made using fresh strawberries, lime, and mint, topped off with gut-friendly kombucha, this beverage is perfect for a summer evening. Using Seek North's Hibiscus Ginger kombucha, this beverage's flavor profile is deepened by the tangy, fruitiness of tropical hibiscus.
4 mint leaves, stems removed
3/4 cup of fresh strawberries, sliced with the stems removed
2 tablespoons of lime juice
4 ounces of sparkling water (substitute vodka or clear rum for an alcoholic version)
12 ounces of ginger kombucha
1 cup of ice
Strawberries, lime wedges, and mint leaves, for garnish
1. In a small bowl, muddle the mint leaves, strawberries, and lime juice with a mortar and pestle until the strawberries form a puree. (If you don't have a mortar and pestle, you could also form the puree in a blender or food processor).
2. Divide the puree amongst two cocktail glasses.
3. Add 6 ounces of kombucha and about 2 ounces of sparkling water to each glass. Fill the rest with ice.
4. Stir everything together and garnish with fresh strawberries, lime wedges, and mint leaves. Sip and enjoy!
