Ingredients
- 1 lb of fiddleheads
- 1 tbsp olive oil
- 2 tbsp butter (divided)
- 2 cloves garlic
- 1 tbsp fresh lemon juice
- 1 tsp fresh lemon zest
Directions
1. Carefully wash your fiddleheads to remove any dirt and remove any brown skin. Then, take off the brown ends. You can wash them in cold water multiple times if necessary.
2. Place the fiddleheads in a pot of boiling water and let them cook for 10-15 minutes. Drain and rinse.
3. Heat the olive oil in a pan and add 1 tbsp of the butter, allowing it to melt fully. Put in the garlic and fiddleheads and let them cook for just a few minutes. Add in the rest of the butter, as well as the lemon juice and lemon zest. Cook to your desired consistency and serve.
