Italian Sausage and Tortellini Soup

If you're looking to serve up comfort, do it in a bowl filled to the brim with this comforting Italian sausage tortellini soup.


1 lb bulk mild Italian sausage

1 medium onion, chopped

2 medium carrots, chopped

cloves garlic, finely chopped

2 cartons (32 oz each) chicken broth

package (9 oz) refrigerated fresh cheese tortellini

bag (5 oz) baby spinach


In 5-quart Dutch oven, cook sausage, onion, carrots and garlic over medium heat 8 to 10 minutes, stirring occasionally, until sausage is thoroughly cooked; drain. 

Stir in broth; heat to boiling over medium-high heat. Add tortellini; reduce heat to low and cook 8 to 12 minutes or until tortellini are tender. Stir in spinach and cook 1 to 2 minutes or until spinach is wilted.
