Apple Chutney

This sweet and savory topping is the perfect addition to some pork chops from Oink & Gobble Farm or smoked ham steaks from Drover Hill Farm. If you're trying to use up some apples in your pantry, look no further than this chunky spread. Featuring apples, ginger, orange juice, and mustard seeds, this recipe is a delicious combination of sweet and heat.

6 apples:  peeled, cored, and half-inch diced

1 cup of chopped yellow onion

2 tablespoons of minced fresh ginger

1 cup of freshly squeezed orange juice (2 oranges)

3/4 cup of cider vinegar

1 cup of light brown sugar, lightly packed

1 teaspoon of whole dried mustard seeds

1/4 teaspoon of hot red pepper flakes

1 1/2 teaspoons of kosher salt

3/4 cup of raisins

1. Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, red pepper flakes, and salt in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally.

2. Reduce the heat to a simmer and continue cooking, stirring occasionally for 50 minutes to 1 hour, until most of the liquid has evaporated. Remove the saucepan from the heat and add in the raisins.

3. Set aside to cool and store covered in the refrigerator.
