Featuring apples, ginger, orange juice, and mustard seeds, this recipe is a delicious combination of sweet and heat.
Ingredients
6 apples: peeled, cored, and half-inch diced
1 cup of chopped yellow onion
2 tablespoons of minced fresh ginger
1 cup of freshly squeezed orange juice (2 oranges)
3/4 cup of cider vinegar
1 cup of light brown sugar, lightly packed
1 teaspoon of whole dried mustard seeds
1/4 teaspoon of hot red pepper flakes
1 1/2 teaspoons of kosher salt
3/4 cup of raisins
Directions
1. Combine the apples, onion, ginger, orange juice, vinegar, brown sugar, mustard seeds, red pepper flakes, and salt in a large saucepan. Bring the mixture to a boil over medium-high heat, stirring occasionally.
2. Reduce the heat to a simmer and continue cooking, stirring occasionally for 50 minutes to 1 hour, until most of the liquid has evaporated. Remove the saucepan from the heat and add in the raisins.
3. Set aside to cool and store covered in the refrigerator.
