A light and fluffy cake that’s loaded with fresh apples, and topped with cinnamon sugar.
Ingredients
Apple Cake
1 1/2 cups brown sugar
1/3 cupoil
1egg
1 cupbuttermilk(or 1 cupmilk + 1 tablespoon white vinegar)
1 teaspoonvanilla
1 teaspoonbaking soda
2 1/2 cups flour
2 1/2 cups chopped apples(see notes)
Cinnamon Sugar Topping
1/2 cupsugar
1 teaspooncinnamon
1 tablespoonbutter, melted
Directions
Preheat oven to 325 degrees.
Mix ingredients in order given, stirring until just combined.
Pour batter into a buttered 9×13 pan.
Combine last 3 ingredients to make a topping and sprinkle / spread it evenly over the batter.
Bake for 45 minutes. Serve with honey butter or whipped cream if you want. APPLE CAKE IS THE BEST!

I added chopped pecans and a mix of both finely chopped apples and apple chunks about a half an inch in size so we could get that great texture that people talk about in the other reviews. I use 3/4 of a cup of brown sugar, 1/4 of a cup of maple syrup, and only half of the amount of the sugar mix for the topping. I have no aversion to sugar, but what I used was really plenty, and we had it with Häagen-Dazs French vanilla ice cream when it was still warm-- and now I'm ready to die. (Not really. But for emphasis, you know.) Make it. It's easy. And it's delicious. You'll make it year round.

April 27, 2020 Super simple, and oohhh so good! I substituted no sugar added applesauce for the oil and it was really moist. I also made 1/2 recipe to try on my family and they loved it! Served it warm with a big scoop of vanilla ice cream. Definitely will make again.

April 25, 2020 Since we are a household of only 2, we made a half-recipe using a small egg and baked in a round 8” pan for 30 minutes. It turned out perfectly - moist and delicious, but not too sweet. My biggest fear was that the apples would be crunchy after only 30 minutes, but they were cooked perfectly. The topping added just enough crunch and sweetness. I will definitely make this again using the full recipe to share with family.
