Pistachio Pesto

This delicious pesto is light, bright, and vibrant in flavor and color! Ready in just 10 minutes, this sauce will brighten up any pasta dish. We recommend using the Smoke Shack Snacks' SmokeStachios:  they are spicy, smoky, and savory, making them a perfect addition to this pesto's flavor profile. 


2 cups of basil

1 1/2 cups of Parmesan cheese, finely grated

1/2 cup of extra virgin olive oil

1/3 cup of pistachios 

3 garlic cloves, minced

1/4 teaspoon of sea salt, to taste

1/4 teaspoon of black pepper, to taste


1. Place the basil leaves and pistachios into the bowl of a food processor and pulse several times.

2. Add the garlic and parmesan cheese and pulse several times more. Scrape down the sides of the food processor with a rubber spatula. 

3. While the food processor is running, slowly add the olive oil in a steady stream. Adding the olive oil slowly, while the food processor is running will help it emulsify and keep it from separating. 

4. Stir in salt and freshly ground black pepper, and add more to taste.
