This delicious dish features a homemade five-ingredient vodka sauce that is sure to satisfy! Featuring Bozza's Potato Ricotta Gnocchi, this dish is rich, creamy, and baked to perfection.
Ingredients
For the Vodka Sauce:
2 tablespoons of butter
2 cloves of garlic - grated, minced, or very thinly sliced
6 ounces of tomato paste
1/4 cup of vodka
1 cup of heavy cream
1 cup of chicken broth or water
1 teaspoon of kosher salt
For the Gnocchi:
1 pound of gnocchi
1/2 cup of fresh mozzarella cheese - chopped into bite-size chunks - or mozzarella balls
1/2 cup of grated Parmesan cheese
Fresh parsley or basil
Directions
For the Vodka Sauce:
1. Heat the butter in a large oven-safe pan over medium-low heat. Add the garlic and sauté for 5 minutes until soft (don't let it brown). Add in the tomato paste and sauté for 1-2 minutes. Add in the vodka and sauté for 1-2 minutes. Add the cream, broth, and salt and bring to a low simmer. Once the sauce coats the back of a spoon, remove it from the heat, and set it aside.
For the Gnocchi:
1. Prepare the gnocchi according to the package directions.
1.1. For Bozza's Potato Ricotta Gnocchi, place the gnocchi in 4 quarts of salted boiling water. Wait 15 seconds and stir gently. Boil 4 - 5 minutes, stirring occasionally, then drain.
2. Add the cooked gnocchi to the sauce in the pan, and stir gently to combine.
To Bake the Gnocchi:
1. Preheat the oven to the broil setting (500 degrees F). Arrange the mozzarella over the top and sprinkle with the grated parmesan cheese.
2. Bake for 5-8 minutes until very browned and slightly crisped on top. Sprinkle with parsley or basil and serve.
